    高效液相色谱-串联质谱联用法对黑米色素的组成和结构分析

    Analysis of Components and Structures of Black Rice Pigment by HPLC-MS/MS

    • 摘要: 黑米色素经超声提取后采用高效液相色谱法进行分离,并结合红外光谱和串联质谱(MS/MS)对分离的组分进行了结构鉴定。分离出了两种花青苷类化合物,用一级质谱(MS)和二级质谱(MS2)鉴定出这两种组分分别为矢车菊素-3-葡萄糖苷和芍药素-3-葡萄糖苷,并且测得这两种组分的质量分数分别为15.20%和39.60%。

       

      Abstract: Black rice pigment was extracted ultrasonically and separated by HPLC, and structures of the components were identified by infrared spectroscopy and electron spray ionization mass spectrometry (MS/MS). Two anthocyanidins were separated, which were found to be cyanidin-3-glucoside and peonidin-3-glucoside with their relative contents of 15.20% and 39.60% respectively, as identified and determined by primary MS and secondary MS.
