Abstract
The method of spectrophotometric determination of nitrite in food was improved in 2 respects: ① ultrasonic extraction of sample was adopted, thus requiring less time for operation; ② analytical operation was carried out under conditions with small volumes, thus making the method to meet the requirements of rapid analysis. It was shown that the accuracy and precision of the present method were in consistency with those of the method given in GB standard.
